As meat constricts as it cooks, uncooked meat will be forced up and out, creating a little ball of beef in the middle. The dimple should help the cooking speeds of the outside and inside the patty match for an even cook. You need the dimple to help reduce the cooking time of the center of your hamburger as the outsides cook much more quickly. Don’t forget to add a ¼ inch deep dimple to the center. Now shape your patties into the size that you would like. If you are using a grill, you don’t need to worry about this step as you can just move the hamburgers to the side, so they are not being hit by direct heat. If you’ve got a vent fan near your stove you may want to turn it on to avoid setting of a smoke alarm.First, you need to heat your oven to 250 ☏ (120 ☌). When cooking in a pan the burger will cook in it’s own juices giving it a nice crusty coating on the outside (called the maillard reaction – pronounced my-yard). Switch it to high and put on your burgers for a few minutes per side. These turn out just as good, meaning if the weather outside isn’t ideal you can still get a great burger.Ī cast-iron pan is ideal for doing this because the temperature is very evenly distributed on the pan. Add a little butter or oil to the pan and set it to medium heat to warm up. Your burger gets a nice light char on the outside, those beautiful grill marks, and some smokey flavoring. Grilling is the classic summer time way to cook a burger, and can yield great results.
